Cracked wheat bulgur is tossed with parsley, fresh mint and tomatoes, then seasoned with lemon juice and allspice. The fresh herbs bring out the crisp fresh flavors in this hearty salad. This recipe comes from The Kids Cook Monday Pilot with Columbia Teachers College and the Harlem Health Promotion.
Kid: Rinse the bulgur several times.
Adult: Boil the water in a medium saucepan over high heat. Add the bulgur and bring back up to a boil. Let boil for 1 minute. Remove from heat and let bulgur stand 30 minutes to absorb water.
Kid: Mix all the bulgur, parsley, mint, tomatoes, lemons, olive oil together in a large bowl.
Together: Season with allspice and salt and pepper to taste and enjoy.
