Tender lettuce leaves are the backdrop for this fruit salad that offers another way to highlight luscious strawberries- rich in sweet flavor and antioxidants- during their spring through summer harvest. Kids will have fun squeezing the oranges for juice and whisking the vinaigrette. This recipe comes to us from RD Sharon Palmer, author of The Plant-Powered Diet.
Adult: Slice the strawberries, red onion, basil and Brazil nuts. Set the chopped Brazil nuts aside.
Together: Combine the tender lettuces, chopped strawberries, fresh basil and red onion, if using, together in a small bowl.
Kid: Squeeze the orange to make 1 1/2 tablespoons on orange juice. Whisk the orange juice, balsamic vinegar, extra virgin olive oil and black pepper together in a small dish.
Together: Toss the salad with the dressing. Garnish with the Brazil nuts and enjoy!
