This overnight strata makes dinner or brunch the next day so simple! Since it should be prepared in advance, all you have to do when you want to eat it is pop it in the oven, making it easy to serve a crowd! This recipe comes to us from our friends at Potato Goodness and was developed by Jackie Newgent, RD.
Cooking Tip of the Week: Melting butter and olive oil together allows you to add the flavor of butter to your dish while the olive oil keeps it from burning.
Food for Thought: Look for tricolor potatoes in the produce section. They are a mix of red, purple and yellow potatoes and are sure to add color to any dish! But if you can’t find a tricolor mix, you can substitute any variety of small potato labeled “creamer.” These potatoes are small because they are harvested early, leading to a creamier texture than older potatoes.
Family Dinner Conversation Starter: What is your favorite thing about your mom? What about your grandma, aunt or any other woman in your family?
Kid: Coat a 9- x 13-inch or 3-quart baking dish with cooking spray. Set aside.
Adult: In a nonstick Dutch oven or large deep skillet, melt the butter with the oil over medium-high heat.
Together: Add the potatoes, onion, and rosemary and sauté until the onion begins to caramelize, about 8 minutes. Stir in the vinegar.
Together: Add the spinach a large handful at a time and toss using tongs until wilted, about 2 1/2 minutes.
Together: Add 1/4 teaspoon of the salt and, if using, the nutmeg and toss to combine. Set aside.
Kid: Evenly arrange half of the bread pieces in the baking dish.
Together: In order, evenly top with half of the spinach-potato mixture, half of the cheeses, and the remaining bread pieces, potato-spinach mixture, and cheeses.
Together: Drizzle with any remaining liquid from the Dutch oven.
Kid: Whisk together the eggs, almond milk, pepper, and the remaining 1 teaspoon salt in a large bowl and pour over the layers in the baking dish.
Together: Cover and chill overnight (at least 4 hours) in the refrigerator.
Together: Remove the strata from the refrigerator and remove cover.
Adult: Preheat the oven to 375°F. Bake until the strata is set, about 55 minutes. Let stand for at least 5 minutes, and serve.
