Show your family love by breaking out the cookie cutters for this delicious pasta dinner. Kids will have fun making hearts out of mozzarella, but also learn how to use the cheese scraps left behind. The pink sauce recipe makes more than you’ll need for the tortelloni, so save leftovers to use for dipping, over pizza or any other time you need a tomato sauce. To make the pink tomato sauce:
Adult: Place the olive oil in a large, heavy-bottomed pot over high heat. Add the onions and garlic to the pot and turn heat down to medium. Cook, stirring occasionally, for about 4-6 minutes, or until the onions are translucent.
Adult: Stir the tomatoes and basil into the pot and heat to a gentle bubble. Simmer for about 30 minutes and stir in the half and half and parmesan.
Together: Sprinkle the salt into the sauce, stir and dip pieces of bread into the sauce to taste for seasoning. Adjust seasoning if desired.
To complete the I Love You So Tortelloni-os:
Adult: Place a separate large pot of salted water over high heat and cook the tortelloni according to package directions. Drain and set aside.
Kid: Using a heart cooking cutter, cut hearts out of the mozzarella slices. Reserve the scraps from the mozzarella slices.
Adult: Using scissors, cut hearts out of each basil leaf and set aside. Reserve the scraps from the basil leaves.
Together: Toss the cooked tortelloni with the mozzarella and basil scraps leftover from making the hearts. Transfer the tortelloni to a large platter and dress with about 4 cups pink sauce, or as much as desired.
Kid: Divide the tortelloni between 6 plates, decorate with the mozzarella and basil hearts and enjoy!
