Zucchini packs an herbal punch with this sharp marinade, balanced by a hint of smoke from the grill. Kids will have fun shaking the zucchini with its marinade in a zipped up bag. This recipe comes to us from Andrea Meyers of Andrea’s Recipes.
Together: Carefully cut the zucchinis into 1/2 inch slices. Transfer the zucchini slices to a large zipper bag.
Adult: Rub a grill with oil and preheat the grill to medium-high.
Kid: Remove the leaves from the rosemary and thyme and set aside in a medium bowl. Whisk the olive oil, lemon juice, white balsamic vinegar, salt and pepper into the bowl with the fresh herbs. Add the herb marinade to the zipper bag and press the air out of the bag before sealing it. Shake to distribute the marinade and refrigerate for at least 2 hours.
Adult: Lay each zucchini on the grill, reserving the marinade. Cook for 2-3 minutes, turn and cook 2-3 minutes more, or until each zucchini is cooked through. Transfer the cooked zucchini to a platter, drizzle with the reserved marinade and enjoy!
