Tangy feta goes so well with fruit it’s no surprise that refreshing watermelon makes a perfect pairing. Kids will have fun whisking the lime dressing together and arranging the ingredients into a delicious salad stack. This recipe is adapted from Kirsten Uhrenholdt of The Family Dinner Book.
Kid: Pat the melon slices dry on both sides with a paper towel.
Adult: Place the watermelon slices on the grill. Grill for about 2 minutes on one side only, or until the grills make their mark. Transfer to a plate and set aside.
Together: Whisk 3 teaspoons of the lime juice together with the olive oil and a few pinches of salt. Taste and adjust seasoning if desired. Toss the greens with the lime juice dressing, taking care to ensure the ingredients are evenly distributed.
Together: Put the greens on a large platter and top with 4 pieces of watermelon, grill marked sides up. Top with the feta and remaining melon. Drizzle with the remaining 2 teaspoons lime juice, pumpkin seeds and another pinch of salt and enjoy!
