Served with fresh veggie sticks or whole-wheat pita, this colorful hummus makes a perfect after school snack or potluck dish. Little chefs will have fun rolling and juicing lemons with their hands and watching the hummus take on a bright green hue as the ingredients are blended together. This recipe comes to us from our friends at Veggiecation.
Adult: Use can opener to open and drain chickpeas. Peel one clove of garlic and mince.
Together: Add chickpeas, spinach and garlic to blender or processor. Measure 2 Tbsp of olive oil, ¼ cup of water and ¼ cup tahini. Add liquids to blender.
Kid: Use the palm of their hand to roll a whole lemon on a flat, hard surface to “loosen up” juice inside.
Adult: Cut lemon in half.
Kid: Squeeze lemon halves to fill up a ¼ cup. Add lemon juice to blender. Sprinkle ¼ tsp. salt into blender.
Together: Cover and turn on blender. Blend well. Serve and enjoy with fresh veggie sticks or whole-wheat pita.
