Cooking Tip of the Week: Cooking fluffy brown rice can be easy! Rinse the dried rice, boil it in a large pot of water (just like when you prepare pasta!) for 30 minutes, drain the water, and put a lid on it to steam for 10 minutes.

Ingredients:
1 package (8-½ oz) ready-to-serve whole grain brown and wild rice medley
¼ cup Greek vinaigrette, divided
½ medium ripe avocado, peeled and sliced
¾ cup cherry tomatoes, halved
¼ cup feta or dairy-free cheese, crumbled
¼ cup Greek olives, pitted and sliced
Directions:
Adult: Peel and slice avocados.
Adult: Slice cherry tomatoes in half.
Adult: Pit and slice olives.
Adult: Combine rice mix and 2 tablespoons of vinaigrette in a microwave-safe bowl and cook on high until heated through.
Kid: Divide the rice between two bowls.
Together: Top with avocado, tomatoes, cheese, olives, and remaining dressing.
