Apricot and Pepita Quinoa

Heart healthy grain quinoa is cooked savory in vegetable broth to balance the sweet dried apricots folded in after cooking. Pumpkin seeds are toasted on the stovetop to finish the dish with a signature crunch. This recipe comes to us from Catherine of Weelicious.

Adult: Toast the pepitas in a skillet over medium-high heat for 2-4 minutes, or until pepitos begin to become fragrant.

Together: Place quinoa, water, broth and olive oil in saucepan and bring to a boil over high heat. Stir in pepitas and apricot pieces, cover and reduce heat to low.

Adult: Cook for 10 minutes, or until the liquid is absorbed. Serve and enjoy.
