Sweet red apples and tart Granny Smith apples balance beautifully against fennel’s licorice flavor. This fruit salad can just as easily double as a slaw, so try it on sandwiches and burgers as well as on the side. This recipe was used in The Kids Cook Monday pilot with Columbia Teachers College and the Harlem Health Promotion.
Together: Chop the fennel and apples in julienne. Place the fennel, apples, carrot and green onions in a medium bowl and toss well.
Kid: Combine the water, vinegar, oil, sugar and salt in a small bowl. Whisk together until well blended.
Kid: Add to the fennel apple mixture and toss gently to coat. Cover and chill. Garnish with fennel fronds if desired.
