Zucchini and tomatoes shine when seasoned with fresh basil, parsley and Parmesan cheese in this one-dish wonder. Kids will have fun layering the sliced zucchini, tomatoes and fresh herbs to build a beautiful casserole of their own design. This recipe comes to us from Andrea Myers of Andrea’s Recipes.
Adult: Preheat an oven to 350 degrees. Warm 2 tablespoons of the olive oil in a skillet over medium heat. Add the onions and sauté for about 5 minutes, or until translucent. Remove from heat and set aside.
Kid: Lightly brush the bottom of a 3-quart casserole dish with olive oil. Arrange the zucchini slices around the bottom of the pan and add a layer of tomatoes. Sprinkle with chopped parsley. Repeat with another layer of zucchini, another layer of tomatoes and top with the sliced basil. Finish the dish with a final of zucchini and then tomatoes.
Together: Arrange the onions and garlic on top of the casserole. Sprinkle a pinch or two of salt and pepper. Drizzle the remaining olive oil around the top and sprinkle with parmesan cheese.
Adult: Transfer the casserole to the oven and bake for 45-60 minutes, depending on how well done you prefer your zucchini. At 45 minutes it will be tender but not soft. When the casserole has been cooked to preference, remove from the oven and let cool for 5 minutes. Enjoy!
