These fruit-nut treats taste like cookies, but give the family much more protein and fiber. Kids will have fun scooping and shaping the batter into spheres before baking. And if your oven’s on the fritz, you can even eat them raw! This recipe comes to us from Alysa Bajenaru of Inspired RD.
Adult: Preheat your oven to 350 degrees. Prepare 2 cookie sheets with layers of parchment paper. Soak the raisins in a bowl of hot water for 10 minutes, or until rehydrated.
Together: Combine the sunflower seeds, almonds, cinnamon, salt and chia seeds to a food processor. Drain the raisins from the hot water and add them to the food processor. Pulse until well combined.
Kid: Using a small ice cream scoop, make balls of raisin-almond mix. Roll the balls into spheres with your hands and transfer to the prepared cookie sheets. You may have to bake them in batches.
Adult: Transfer the cookie sheets to the oven, bake for about 15 minutes and enjoy!
