Rainbow Hero Sandwiches
This sweet, nutritious sandwich is fun to prepare and delicious to eat! It features a banana and avocado spread that is a tasty spin on traditional mayonnaise. This recipe comes to us from our friends at Dole Fresh Vegetables.

Cooking Tip of the Week: Jalapeno peppers don’t just taste hot, they feel hot too! Touching the inside of a hot pepper can cause a burning feeling on your hands, so make sure an adult handles the job of chopping them.
Food for Thought: What makes a food taste sweet? Sugar of course! Many foods contain sugar, but it’s best to satisfy our sweet tooths regularly with produce, which contains naturally occurring sugar. Foods like soda and cookies contain added sugar, which we should eat only sometimes as part of a healthy diet. An easy way to tell the difference: if the food comes straight from nature (like fruit), the sugar is naturally occurring!
Family Dinner Conversation Starter: Who is your hero? Why?
Ingredients:
- 1 1/2 cups sliced cauliflower, 1/4-inch thick
- 8 slices sweet potatoes, 1/4-inch thick
- 2 slices fresh pineapple, 1/4-inch thick
- Olive oil spray
- 1 teaspoon smoked paprika
- Salt to taste
- 4 small whole wheat rolls
- For the Banana Avocado Cream Spread
- 1/2 teaspoon chopped garlic clove
- 1 trimmed green onion
- 1/4 cup cilantro leaves
- 1/2 teaspoon chopped jalapeno pepper
- 1/2 banana
- 1 avocado
- 1/2 tablespoon lime juice
- pinch smoked paprika
- salt to taste
Directions:
Adult: Preheat oven to 400°
Kid: Arrange cauliflower, sweet potato and pineapple on baking pan.
Together: Spritz with olive oil spray and season with smoked paprika and salt.
Adult: Roast for 20 minutes, until vegetables and fruit soften and lightly brown. Remove and set aside.
Together: Slice rolls in half and spread the top and bottom with the Banana-Avocado Cream Spread (recipe below).
Kid: Layer the cauliflower, sweet potato and pineapple slices on the roll and top with baby spinach.
For the Banana-Avocado Cream Spread:
Together: In a food processor, combine 1/2 teaspoon chopped garlic clove, 1 trimmed green onion, 1/4 cup cilantro leaves, and 1/2 teaspoon chopped jalapeno pepper.
Together: Process until a rough chop. Add 1/2 banana, 1 avocado, 1/2 tablespoon lime juice, a pinch smoked paprika and salt to taste, process until smooth.
