Mini Quiche Lorraine

These mini quiches are super easy, lower in calories and perfectly portioned for little eaters. Instead of a pastry crust, the quiches are nestled in little cups made from Swiss cheese, softened onions and crispy bacon. This recipe was created by Amy Deline, who writes the blog The Gourmand Mom.

Ages 12-15

Kid: 
 Preheat an oven to 375 degrees F and position a rack in the center of the oven. Coat two 12-cup muffin tins with nonstick cooking spray.

Adult: 
 In a skillet over medium heat, melt the butter until foam subsides. Add the onion and cook 7 minutes, or until tender and golden.

Kid: 
 In a medium bowl, whisk together the eggs, milk, salt, pepper and parsley. Set aside.

Kid: 
 Add a pinch of cheese, onions and bacon to the bottom of each muffin cup.

Together:  Fill each muffin tin until the batter just reaches the top of each muffin cup.

Adult: 
 Bake for 15 minutes, or until the muffin tops are puffed and golden.
