Nutritious sweet potatoes and kidney beans add substance while fiber rich oats bind and shredded carrots add texture. The end result is a brightly colored, savory-sweet veggie burger. Kids will enjoy mixing together and shaping into patties. This recipe comes to us from our friends at Veggiecation.
Ingredients:
- 1 15-ounce can of kidney beans
- 1 cup carrots – shredded
- 1 medium raw sweet potato
- 1 cup of whole oats
- 2 tablespoons olive oil
- 1 egg (or “flax egg,” 1 tablespoon ground flax soaked overnight in 3 tablespoons of water)
- 1 teaspoon turmeric
- 1/4 teaspoon cumin
- salt and pepper to taste
Directions:
Kid: Grate sweet potato and shred carrots (if not already measured out).
Adult: Place drained and rinsed kidney beans in a food processor or blender and pulse until well mixed but not smooth.
Kid: Place mashed beans into a large bowl and add the remainder of the ingredients. Mix well with your hands.
Together: Divide mixture into 4-5 portions and form into patties.
Adult: Cook on a hot, oiled pan or griddle over medium high heat until golden brown, about 3-4 minutes per side. Serve with pita bread or a salad.
