Fig and Greens Tart
Normally when you think of pizza toppings, pepperoni, sausage, or vegetables may come to mind. This recipe offers a sweeter twist to what we think about pizza. This creative, homemade pizza recipe comes from our friends at Dole.

Cooking Tip of the Week: Crispy or soft? If you would like the arugula greens to remain crispy, be sure to add the arugula, balsamic vinegar, and olive oil after the pizza is cooked. If you prefer softer greens that soak up the flavors of the other ingredients, assemble the pizza with all of the ingredients before placing in the oven.
Food for Thought: What’s the name of a baby goat? A kid! This recipe uses goat cheese that your kid may enjoy too. Goat cheese is made from goat’s milk. Compared to cow’s milk, this cheese has a tart and tangy flavor. This makes for great pairings with fruits or bitter greens, just like the figs and arugula featured in this recipe. However, if your kid prefers a milder taste, try mascarpone or ricotta cheeses instead. Both of these cheeses are easy to spread like goat cheese, but are sweeter and don’t have the strong flavors that goat cheese does.

Ingredients:
For the Pizza:
- 16 oz. whole- wheat pizza dough
- 4 oz. goat or dairy-free ricotta cheese
- 6 dried figs, chopped
- 1/2 teaspoon fresh rosemary, chopped
- 5 oz. arugula (such as DOLE® Arugula)
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- Salt, to taste
For the White Bean Hummus:
- 1 cup white beans
- 1 tablespoon tahini
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon peel, grated
- 1 teaspoon garlic, chopped
- 1/2 teaspoon salt
Directions:
Adult: Preheat the oven with pizza stone to 450°F.
Together: Roll out pizza dough into a thin 14-inch round. Transfer dough to a pizza pan or peel.
Kid: Spread white bean puree over the dough and top with nuggets of goat cheese, figs and rosemary.
Adult: Bake 10 to 15 minutes or until the dough crisps and browns. Remove from oven.
Together: Toss arugula with balsamic and olive oil. Place it on top of pizza and cut into 8 wedges.
To make the white bean hummus:
Together: Puree 1 cup white beans, 1 tablespoon tahini, 1 tablespoon olive oil, 1 tablespoon lemon juice, 1 teaspoon grated lemon peel, 1 teaspoon chopped garlic and 1/2 teaspoon salt in the bowl of a food processor until smooth.
