Mixing up crunchy, healthy, winter vegetables like broccoli and carrots with kid favorites like cheddar cheese and tortillas is a quick and easy way to get a healthy dinner everyone will enjoy on the table in no time. This recipe comes to us from our friends at Dole.
Food for Thought: Broccoli and cauliflower are part of the cruciferous (kroo-sif-er-uhs) vegetable family. Brussels sprouts, kale, cabbage, and bok choy are also members of the cruciferous club. Each has a slightly bitter taste and is high in vitamin C and heart-healthy fiber.
Together: Chop the broccoli, cauliflower and lettuce and shred the carrots.
Kid: In a mixing bowl, combine carrots, broccoli, cauliflower and onions with cheese, dressing and chili powder.
Together: Lay tortillas flat on the counter and spoon about 1/2 cup vegetable mixture and 1/4 cup lettuce down the center.
Kid: Wrap each tortilla around the vegetable mixture
