This Cherry Tomato Pesto Penne is a quick, easy dish for a weeknight dinner and has lots of tasks for little hands. And while kids may love to see pesto come together from scratch, save your favorite pesto recipe for another day. Here, we’ve used a time-saving prepared pesto (the type found in a grocery store’s refrigerated section is just as flavorful as homemade!)
Together: Chop or rip up the basil, grate the Parmesan cheese, and slice the cherry tomatoes.
Kid: Fill a large pot with water and add 1 tablespoon salt.
Adult: Bring the pot of salted water to a boil over medium-high heat.
Together: Carefully add the penne to the pot of boiling water. Cook according to package directions, or until it is cooked to al dente.
Together: Drain the penne in a colander, reserving some of the pasta’s cooking water in a small bowl below.
Together: Return the penne to its pot and stir in the pesto sauce and 2-3 tablespoons of the reserved pasta cooking water.
Kid: Add the pine nuts to the pot and stir to combine.
Together: Transfer the penne to a serving platter, top with cherry tomatoes, sprinkle with the chopped basil and parmesan cheese to taste.
