Cherry tomatoes are sautéed sweet in olive oil and garlic. Balsamic vinegar and fresh basil marinate the tomatoes in classic Italian flavors and the whole wheat pasta will keep the whole family fuller, longer. This recipe comes to us from Elyse at Veggie Teens.
Together: Prep ingredients.
Adult: Begin to cook pasta according to package directions.
Together: In a medium skillet over medium-high heat sauté tomatoes in 1 tablespoon of the olive oil for 2-3 minutes while the pasta is cooking.
Together: Add minced garlic and sauté for about a minute or until garlic becomes flavorful. Be careful not to burn garlic or it will become bitter.
Adult: Drain pasta and return it to the pot.
Kid: Toss cooked pasta with tomatoes, remaining tablespoon of olive oil, vinegar and basil.
Together: Add the salt and fresh ground pepper or red pepper flakes to taste.
Kid: Top with optional Parmesan cheese.
