Brown rice is cooked in vanilla cinnamon infused rice milk in this comforting dessert. Agaves sweetens the pudding for a lower impact on blood sugar than white sugar versions. This recipe comes to us from Catherine of Weelicious.
Ingredients:
2 cups brown rice
1 cup vanilla rice milk
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
2 tablespoon agave nectar* or honey
* Agave (ah-Gah-vay) nectar is similar in taste & texture to honey but has a lower impact on blood sugar when compared other sweeteners. Agave can be found in the health food or specialty food aisle of most grocery stores.
Directions:
Together: Place brown rice, rice milk, vanilla extract, cinnamon and agave in a sauce pan and cook over medium heat for 8-10 minutes, or until thick.
Adult: Place in bowls and cool. Serve chilled or at room temperature.
