Sweet & Savory Brussels Sprouts with Quinoa

Grapes are a sweet surprise to the classic pairing of bacon with Brussels sprouts, served over fluffy, heart healthy quinoa. Kids will have fun quick cooking the grapes until they burst. This recipe was created by Alysa Bajenaru of Inspired RD.

Ages 12-15

Serves 4

  • 20 Brussels sprouts
  • 4 slices bacon
  • 2 cups red grapes
  • 1 cup quinoa
  • 1/2 teaspoon coarse sea salt

Adult: Slice the Brussels sprouts very finely.

Kid: Rinse the quinoa thoroughly in a colander. Transfer the quinoa to a medium pot. Add 2 cups of water and bring to a boil over medium-high heat. As soon as the water boils, reduce heat to medium-low and simmer for about 10 minutes, or until all the liquid has been absorbed. Fluff with a fork, transfer to a large serving bowl and set aside.

Adult: Place a skillet over medium-high heat. Add the bacon and cook about 2-4 minutes per side, or until crispy. Transfer to on a paper towel lined plate to let it absorb any excess oil.

Together: Add the grapes to the same skillet and sauté for 2-3 minutes, or until they begin to burst. Transfer to a plate and set aside. Add the Brussels sprouts to the skillet and cook, stirring occasionally, for about 5 minutes, or until the leaves are bright green and slightly browned. Transfer to the plate with the grapes.

Adult: After the bacon drains, chop it roughly.

Together: Toss the quinoa with the bacon, grapes and Brussels sprouts. Season with the salt and enjoy!
